Sandrine Ramoisy

Sandrine completed a year of hotel management in Belgium in 1992, stopped to move to Canada, and restarted in 2005 to get her Hotel Management Diploma with distinction in Vancouver.

With 30years in the hospitality industry, she has worked it all, mostly in 60-80hours/week : from catering in castles in Belgium , then Belgium brasseries to pubs in Dawson Creek and Quesnel, then a move to Vancouver. Worked 5 years at the Listel, Shangri-La and Kimtpon hotels, breakfast, lunch and dinners. 5 years at the famous Le Gavroche as a server first, then manager. Now, many restaurants later, she is still collaborating at Le crocodile restaurant, where she started in 2007.

Eric has been in the hospitality industry since 1998. From 2000 to 2020, he was the founding principal, executive director behind an accredited hotel management school based in downtown Vancouver, and the college has sent hundreds of workers into the hospitality industry, all over the world, in the 20+ years it operated.

Eric recently came out of retirement to contribute to the academy and he very much looks forward to being a mentor to all trainee students, sharing his story in the industry all these years, especially in the areas related to fine wine and luxury service requirements and client expectations. He is on mission to help improve service level in this industry, and has many idea hiding up his sleeve.
